Most ground cinnamon available in grocery stores is actually cassia, a cheaper and more pungent relative of Ceylon cinnamon, which is the only "true" cinnamon. Because of its subtler flavor, Ceylon cinnamon is best suited to sweet recipes, although the cinnamon traditionally used in Mexican and South Asian cuisine is also Ceylon cinnamon.
