It's officially summer, which means it's bbq season! These cheesy zucchini boats are great as a side or the main course.
4 medium zucchini
5 tsp olive oil, divided in two
3 cloves garlic
1/4 medium red onion
1/2 cup shredded part-skim mozzarella cheese
4 tbsp grated Parmesan cheese
1 tsp Vanillablossom Paprika
1/2 tsp Vanillablossom Ground Pepper
2 tsp Vanillablossom Basil
2 tsp Vanillablossom Oregano
1/2 teaspoon salt
Slice zucchini in half lengthwise. Brush open face with half the olive oil and grill face down over medium heat until soft.
Mince garlic and finely chop the onion. Combine both in medium bowl with remaining oil, onion, mozzarella, Parmesan and spices. Mix well.
Flip zucchini face up, and top with mixture. Grill until cheese has melted and serve warm. Enjoy!
