Saturday Morning Pancakes
Fluffy and moist and oh so delicious! This will be a new favorite in your household for sure. Substitute water and oil for a dairy-free option!
1 1/2 cups milk (or water)
1/4 cup melted butter (or olive oil)
2 large eggs
2 tsp Vanillablossom Vanilla Extract
2 cups all purpose flour
1/4 cup granulate sugar
4 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
Heat a frying pan over med-high heat. Combine wet ingredient and whisk until well combined. In a separate bowl, sift dry ingredients and mix until combine. Slowly fold in wet ingredients until just combined.
Lower head to med/medium-low and use a 1/4 cup to measure out pancake portions into pan. Cook until brown and edges are slightly dry. Flip and cook other side until brown. Pancakes not cooking all the way through? Place a pot lid over your pancake while they cook for more even heat distribution.
Serve with butter, syrup, fruit or your favorite jam. Makes approx. 12 - 16 pancakes.
