Vanilla Cinnamon Pancakes

This Vanilla Cinnamon Pancake recipe is a delicious twist on classic pancakes. The vanilla extract and sugar gives the pancakes a subtle vanilla flavor and the cinnamon adds a warm and comforting taste. You can also add a pinch of nutmeg or allspice if desired, to give the flavour more depth. These pancakes are perfect for a lazy weekend breakfast or brunch. They can be served with a dollop of whipped cream, fresh fruit, or a drizzle of maple syrup.


  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1 tsp Vanillablossom Pure Madagascar Vanilla Extract
  • 1 tbsp vanilla sugar (or regular sugar)
  • 1 egg
  • 1 cup milk
  • 2 tbsp butter, melted
  • Powdered sugar, for dusting (optional)


In a medium bowl, whisk together the flour, baking powder, baking soda, salt, ground cinnamon, vanilla sugar.

In a separate bowl, whisk together the egg, milk, vanilla extract, and melted butter.

Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Avoid over-mixing. The batter should have small lumps.

Heat a non-stick skillet or griddle over medium-high heat. Grease it with butter or cooking spray.

Using a ladle or measuring cup, pour about 1/4 cup of batter onto the skillet for each pancake.

Cook the pancakes for about 2-3 minutes, or until bubbles appear on the surface and the edges start to look set.

Flip the pancake and cook for another 1-2 minutes, or until golden brown and cooked through.

Repeat with the remaining batter.

Serve the pancakes warm, dusted with powdered sugar and drizzled with maple syrup, if desired.
