Mace is a spice that comes from the outer, lacy covering of the nutmeg seed, known as the aril. After the nutmeg is harvested, the mace aril is carefully removed, dried, and then either sold as whole blades or ground into a powder. The color of mace can range from bright red to yellowish-brown, depending on its origin and processing. Flavor-wise, mace is closely related to nutmeg but has a slightly more refined and complex profile. It offers a warm, sweet, and slightly peppery taste, with hints of cinnamon, cloves, and black pepper.
